  2. Heat 1 cup of water in a small saucepan until it reaches a boil (about 5 minutes), then remove from heat.
  3. Stir in the sugar-free gelatin powder until it fully dissolves.
  4. Add 1 cup of fruit juice and 1 tablespoon of lemon juice; stir until combined.
  5. If using, fold in fruit pieces gently for added texture.
  6. Pour the mixture into a mold or individual cups and refrigerate for at least 4 hours, or until set.
